Delicious Raw Cauliflower? Absolutely!

Mediterranean Cauliflower Couscous Live Mediterranean “Couscous”

A sweet and mildly spicy-hot delicious cauliflower salad with a great crunch

1 large or 2 small heads of cauliflower, finely ground in a food processor

1 red pepper, diced

1 large or 3 small heads of bok choy, chopped by hand or in a food processor

1 ½ cups fresh parsley, stems removed, chopped

1 cup fresh cilantro, stems removed, chopped

1 cup dried apricots, diced

1 cup jalapeño/lime sunflower seeds (I used soaked and dehydrated seeds I had marinated in jalapeño, lime, and salt… but adding raw sunflower seeds, ground hot pepper to taste, and a bit of extra salt will also work).

½ to 1 cup olive oil

1 TBSP black pepper

Ground hot pepper to taste if desired

½ cup fresh lemon and/or lime juice

¾ tsp sea salt

Combine all ingredients in large mixing bowl or serving dish and mix well.  It’s colorful, crunchy, fresh, and tasty!

    Hey I just found this treasure trove you have here and the cauliflower recipe looks great. I have been doing a lot of raw sushi with the c.flower and was just thinking of trying some variation with it this sounds perfect.

    Finally got around to trying the recipe it was very good and a nice light meal. In honer of the season I added an apple to the mix and used less apricot. This will probably be put in regular rotation for me.

    PS Better the next day will be great travelig dish I can make it the night before and it won’t need much refrigeration
