Creamy Bok Choy and Celery Soup

Smooth Green Soup

comforting, creamy, and healing all in one!

In Vitamix:

1 cup raw almonds

3-½ cups water

Blend and strain through a nut milk bag or fine sieve; set aside milk.

Juice in Greenstar or other juicer:

1 head celery

1 head bok choy

Put into Vitamix:

Almond milk (about 3 cups)

Celery and bok choy juice (about 3 cups)

1 large clove garlic

Juice of ½ lemon

Juice of 1 lime

1 tsp Celtic sea salt

Blend briefly until all ingredients are smoothly combined.  Spoon foam off top or pour through a sieve.  Soup will be warm from processing in the blender…serve in warmed mugs or soup bowls for a delicious and comforting treat.

Tip: Since raw food is made of fresh ingredients, which vary in size and taste, I have learned to always add ½ or less the amount of salt and lemon/lime/vinegar called for.  Taste and then adjust till you love it!

    Can one use sunflower seeds instead of almonds to make the “milk’?

    Hi Laura: You’ve been busy! Congratulations on the website – it looks great and has kept me happily occupied for the last hour or so, catching up.

    I’ll definitely be trying some of the recipes you’ve posted.

    Thanks for the great tip, to use 1/2 or less of salt/lemon/lime/vinegar and then adjust to taste. I’ve ruined some perfectly good raw foods recipes by NOT doing this…
