All-Good Not All-Raw Transitional Falafel Salad With Raw Tahini Sauce

Healthy, Vegan, Fast Food!  I used Sunshine Burgers’ Falafel patties to make a hearty, filling, salad meal that satisfied my falafel craving and took only minutes to put together.  Yummm!  The frozen patties aren’t raw, but they are very healthy.  You can look at the Sunshine Burger nutritional info and website here.  Seriously, this took a lot longer to type up than to make!

For the Tahini Sauce: Put into blender:

1/4 cup fresh lemon juice

5 cloves garlic

1 2-inch piece of ginger

Combine in the blender, and while blender is running, slowly add:

1/2 cup olive oil

1/2 cup raw tahini

1/2 tsp sea salt

Test taste and adjust with more lemon and/or salt as necessary; then add 1/4 to 3/4 cups water slowly until you reach your favorite consistency.

For the Salad:

6 cups Mixed salad greens

1/4 cup chopped red onion

1 red pepper, chopped

1 tomato, sliced or diced

kernals from 1 ear of fresh corn, if desired (Yes! Corn is delicious raw, but it must be very fresh.)

1 cup raw broccoli florets

1-2 lime (or lemon) slices

To Assemble:

Sprinkle veggies except red onion and tomato over greens. Squeeze lime over greens if desired.  Top with 1 or 2 Sunshine Falafel Burgers.  Garnish with red onion and tomato. Top generously with Tahini Sauce.  Makes two big plates of falafel salad.  Dig in!
