Eat Your Colors “Spaghetti”

Zucchini, yellow beet, basil, and Sweet Tomato Spread

One of the things I love best about eating this way is experimenting!  Here’s the Sweet Tomato Spread, poured over zucchini and yellow beet noodles. (A spiral slicer makes super quick work of this, but if you don’t have one you can use a vegetable peeler for “fettuccine” noodles.)  I  had never tried a yellow beet before.  It is sweet and crunchy – firmer than the zucchini noodles, and milder than a red beet..  Top with lots of basil and we had a quick, filling, oh-so-good-for -us dinner.
