Spicy-Sweet Garden Greens Chop-Chop Salad

An Abundance of Garden Fresh Greens

I had so many incredible greens from our garden share this week I had to come up with a new way to eat them all!  Here I have gathered most of the spicy greens: scallions, garlic things that are like little green onions, raddish greens, beet greens, kolrabi greens, red chard, and mustard greens.

Chop everything small

I chopped everything up small…

Shredded carrots

And added shredded carrots for color and flavor balance


Then I looked in my fridge for inspiration.

1/4 cup maple syrup

5 TBSP spicy muctard

2 TBSP Flax oil

whisk together, pour over greens and carrots, and toss well.  Add salt and pepper to taste.  I also added a pinch of cumin and a pinch of ground caraway seeds.

Voila! Spicy Sweet Chop-Chop Salad

Voila!  Now you have a delicious spicy-sweet salad!  This is a big bowl, about 12 cups.  Three adults ate it all up as an entree salad for dinner, and two kids gave it a thumbs up and ate it as a small side salad.  No leftovers!
