For Aunt Joyce

A step beyond carrot sticks...

I was begged for a recipe with ingredients my Aunt could recognize.  No agave, no coconut water, no soaked nuts, dehydrators, Namu Shoyu, jicima, or juicers required.

It’s September: the garden gave me corn, carrots, red peppers, and parsley, among other things.  So I chopped up:

4 carrots

2 red peppers

2 ears fresh corn (just husk and slice off the kernals – fresh corn is yummy raw!)

1/2 bunch parsley

and I tossed it with:

2 tsp Apple Cider Vinegar

1/2 tsp cumin

1/4 tsp sea salt

1 tsp brown mustard

1 tsp brown sugar (use agave or coconut water if you’re really raw!)

It came out reminding me of coleslaw, only prettier.

What about you?  Have you got a request?  A favorite recipe? (if it’s yours and it sounds good, I’ll make it, and if I love it, I’ll post it here as a Guest Posting!) Got a challenge in your quest to eat to feel awesome that you ‘d like solutions for?  Comment here, email me, let me know — I’d love to hear from you.

Laura, Thanks for that wonderful simple recipe. I will be using it this week. Keep up the good work, and don’t worry I can look up all the ingredients I am not familiar with and where to buy them. I am amazed at how much healthier and how much more I pay attention to healthy food and cooking. Thanks and LOL
