Kale Apple Celery Smoothie Plus “Green Taco”

Living Foods can be quick and simple

For the smoothie:

1 green apple

5 kale leaves

3 stalks celery

2 cups water

blend in high speed blender and Voila!

For the Green Taco:

Romaine Lettuce Leaf

Quick Nut Pate

Garnish as desired (I used avocado slices and fresh tomatoes)

Quick Nut Pate: here’s the universal recipe, so you can find your own favorite!

1 cup walnuts, sunflower seeds, or cashews.  These must be raw and unsalted and should be soaked in water for 2-4 hours, then rinsed and drained… but you can use them unsoaked if you’re in a hurry.

Spices! Try 1/2 to 1 tsp of each and use the traditional spices of the cuisine your like.  For example, try cumin, corainder, lime, and salt for a Mexican flavor (as I did for today’s lunch).  Try tomatoes, oregeno, basil, and salt for an Italian twist.  Try lemon, dill, and cilantro.  Play!

Throw it all into a food processor and blend to your desired texture – chunkier for more crunch and longer for a pate or spread consistency.
